Best Plant-based meal: Roasted Cauliflower with Cheesy White Sauce

I watched a video of a woman who roasted a whole, gigantic head of cauliflower and poured a delicious, white, creamy cheese sauce over it. I knew I had to recreate it as best I could. She said it was a good transition into her plant-based lifestyle. Me too!❤🔥
I used turmeric in this because I like the anti-inflammatory benefit of the spice. Use veggie noodles in place of angel hair pasta for an even lighter plant-based meal. 
I used canola oil but olive oil or butter can be substituted. I used red shiraz because that is what I had on hand but white wine is suggested. I used  1/2 teaspoon of nutmeg, white and black pepper, flour, olive oil or butter, one cup soy milk (lactose issues) one tablespoon (optional) salt and pepper to taste.  Make a paste of flour and oil and cook for two minutes then add the milk or heavy cream, chicken broth, wine and remaining ingredients or follow instructions for a basic bechamel sauce.  
Add 1/2 8 ounce wheel of brie—rind and all if preferred—1/2 package of cream cheese, one cup chicken broth and 1/4 to 3/4 cup mild cheddar or cheese of choice. Explore and find your flavor profile. Pour over veggies and serve with pasta and or seafood of choice.😁😋

I made a great big pot of fresh greens prepared in my Instant Pot. We are a plant-based meal household finally and we had leftovers because we don't like greens that much. Anyway, I kept reheating the greens and eventually, all of the water boiled out of the pressure cooker and the once healthy, fresh greens became burnt and stuck to the bottom of the pot.

I used a leftover dishwasher pack dissolved in hot tap water to the soak. It took 10 to 15 minutes for the stuck-on food to loosen and allow me to scrape it out.
